Chopped Sirloin with Mushroom Marsala Sauce
- 1 Tbs of olive oil
- 2 finely diced shallots, or 1 small yellow onion, finely diced
- 1½ pounds of mushrooms, cleaned and sliced (button or cremini)
- 1 Tbs of flour
- 1 cup of Marsala wine
- ½ cup of beef stock
- 2 tsp of freshly chopped thyme leaves
- 1 lb of ground sirloin
- 1 egg, beaten
- 1 tsp of salt
- ½ tsp of freshly ground black pepper
- ½ tsp of garlic powder
- 2 Tbs of finely chopped onion
- 2 tsp of Worcestershire
- ¼ cup of dry bread crumbs
- chopped green onion or chives for garnish - optional
- Begin the Marsala sauce by heating the olive oil in a large saute pan over medium heat. Cook the shallots (or onion) and mushrooms gently until they become translucent, about 5-6 minutes. Stir in the flour, then deglaze the pan with the wine and add the stock and fresh thyme.
Allow to reduce by two-thirds. Now, mix the ground sirloin with the egg, salt, pepper, garlic powder, onion, and Worcestershire, then shape into 4 patties, make sure not to overwork the meat.
- Heat a little oil in a large heavy skillet, cast iron if you have one, cook the patties for 3-4 minutes on each side.
Pour the sauce over the patties and serve, sprinkle with chives or chopped green onions if you like, enjoy!
